Gluten-Free Phunky Dining Experience


If you ever have the chance to visit Nashville, TN and you're looking for a fun, gluten-free atmosphere - you'll have to stop by The Phunky Griddle!

Open for breakfast and lunch,  The Phunky Griddle is located in the Berry Hill area of Nashville - a historic district with a park like setting and old houses that have been turned into businesses as well as parks for the little ones to play. Let's not forget the music studios too!

Settled in a little yellow house and visited by my country music stars,    The Pfunky Griddle is a unique dining experience to say the least and gives those with celiac disease a comforting feeling knowing they are dining in a gluten-free friendly atmosphere.

Owner, Penelope Pfuntner (now you know where the name came from) converted the old house once a flower shop into a quaint cottage eatery.

                                                      When we arrived, we told the hostess that our son has a gluten-free diet and she said, "Is it for celiac?" and I said, "yes it is." She then grabbed a seperate griddle to take to our table. All the tables have built in griddles for you to make your own breakfast. From eggs, pancakes and potatoes - you are the chef! They also have an "Off The Griddle" menu that looks delish! I definitely plan to go back for some yummy looking lunch sandwiches.

Gluten-Free Pancakes and Mashed Hashbrowns!




We ordered gluten-free pancake batter, hashbrowns, sausage and bacon. They cook the sausage and bacon back in the kitchen and bring that out ready to eat, but we got to make our own pancakes and hashbrowns...I don't know why we didn't get eggs?? We were on a mission to eat gluten-free pancakes I guess.

Verdict: 

It was SO MUCH FUN! To be able to take Jack to a restaurant and eat gluten-free pancakes made me sooo happy and of course made Jack happy too!

We will go back for sure and spend a little more time in the Berry Hill area, for some shopping and fun new places to visit.

Gluten-Free Mango/Peach Salsa Chicken & Cornbread

We really enjoyed this dish last night! Give it a try and see what you think!


Crockpot Chicken Salsa Ingredients:

3 Frozen Chicken Breasts
1 Jar of Mango/Peach Salsa 
1 Can of Corn (drained)
1 Can of Black Beans (drained)
1 Can of Diced Tomatoes
1/2 Packet of Taco Seasoning (Old El Paso)
3 Tablespoons of Sour Cream

Note: Depending on how strong you like your flavors,          
you may want to add the whole taco packet for more of a kick.
For more mango/peach flavor, I think next time,
I would do more salsa, less diced tomatoes.


Cheddar Cheese Cornbread Ingredients:

Pamela's Product's Cornbread Mix
1 Stick melted butter
2 Eggs
1 Cup Water
1/2 Cup Sugar
2 Cups Cheddar Cheese


Throw it all in the pot!!


Step 1:

Combine EVERYTHING!

Cook 4-6 on  Low or High - depending on your Crockpot and your timing. I started mine at 10:00am and it was ready by 4:00pm - I had it on high for half the time and then low.






Cheesy Cornbread!



Step 2: 

Bake Cornbread!

Follow directions on the back of the package. There's many different ways to make this cornbread. There's even a recipe with green onions and sour cream or one with green chiles.

Step 3:

After 4-6 hours, the chicken will be easy to pull 
apart with a fork. 

Add the sour cream at this time and stir.





Masterpiece!




Step 4: Time to DIG IN!

Garnish with sour cream, cheese and green onion.

Serve w/ tortilla chips and gaucamole.

Gluten-Free Oatmeal Cookies


          IT'S PAMELA'S TIME!

Month, I wanted to share the Oatmeal Cookies we made using Pamela's Products Oatmeal Cookie Mix.

Easy, Fun and Delicious! I think that's the best way to describe anything I make from Pamela's Products.

Step 1: 

Soften 1 stick of butter in Mixer
then add Oatmeal Cookie Mix 
and 1 Egg 

I used my HANDS to MIX - that's how we roll ;)

*We added walnuts and mini chocolate chips too!

*Cookie dough will be THICK






Step 2:

Use an ice cream scoop to place cookies on tray - or stay messy and use your hands like I did. :)

Make 'em big, small, medium - how everyone you want!

Bake 8-10 minutes







Step 3:

Lookey, lookey - yummy goodness!

Like I said, I'm never disappointed...

Build Your Mountain of Gluten-Free Cheeseburger Yumminess

Climb to the top of this yummy Sunday lunch! While preparing the cheeseburgers for the grill and the red potatoes baking away in the oven, I thought, "let's build a cheeseburger moutain!" Who needs a bun??

I make red potatoes A LOT! I bake them in the oven @375 with olive oil, salt and pepper until crispy and they go along with anything - from chicken, fish, steak and cheeseburgers - red potatoes are one of our gluten-free go-to staples.

I wanted something different today...not just a plain cheeseburger. For Jack, he LOVES his cheeseburger with just ketchup...the kid can eat cheeseburgers! But, for me I wanted to get creative and make something new.

I mean, look at the picture below! It's a mountain of yumminess! 

Gluten-Free Cheeseburger Mountain

Crispy red potatoes, cheeseburger, shredded cheddar cheese, sour cream, tomatoes       and green onion. 

It's kind of like a loaded baked potato, but I actually like the crispiness of the baked         red potatoes. 

Here are some other toppings you could put on your Cheeseburger Mountain:

  • Bacon
  • Avocado/Gaucamole
  • Mushrooms
  • Caramelized onions
  • Swiss Cheese
  • PepperJack Cheese
  • Bleu Cheese
  • Ranch Dressing
  • Jalapenos
  • Salsa 
  • Green Peppers/Onions
  • BBQ Sauce

The toppings are endless!

Try the red potatoes instead of the baked potato - switch it up bit and create your own gluten-free mountain of yumminess!
